I don’t write about my holidays on here very often but not long ago we had a completely fabulous trip to Vermont, the home of maple syrup. Not being huge lovers of sweet things, that didn’t excite us very much, until we spotted a bottle of maple syrup flavoured with chipotle. If there’s anything likely to get us interested in sweets, it’s throwing chillies in them, so we brought a bottle home with us. And, like many items we buy on holiday on a whim, it has been sitting unloved in the kitchen cupboard ever since.
The first thing that springs to mind when I think of syrup is waffles, so I whipped up a batch of the chocolate beer waffles from Vegan Brunch. The batter seemed thinner than other waffle batter but I pressed on with them and they worked very well. The chipotle maple syrup was perfect with them. I love that smoky flavour that chipotles bring to any party, and if you throw in chocolate and beer and call it breakfast, then it’s got to be a win.
There’s lots of syrup left, so if anyone’s got any good ideas for it, ideally with savoury food next time, then please leave me a comment.
Nice, I haven’t tried those waffles yet, I don’t know why because they’d made of chocolate AND beer – win!
How about for tempeh bacon? Simple and straight ahead, but probably good!
I have a good idea for it: feed it to me when I visit.
