Vietnamese style seitan baguette with spicy broth

This was an intriguing recipe from Veganomicon. It says it was based on 2 different sandwiches – a traditional Americon and a Vietnamese one. I’d never seen or eaten either, so I didn’t have much to go on. I didn’t let that put me off as I liked the idea of dipping a sandwich into broth. The broth itself was a lovely gingery savoury flavour. I used shop bought seitan for the sandwich, which also had vegan mayo, coriander, cucumber and red onion in. It was a new experience for me, and a tasty one!
