Aubergine paprikash

This was a really good, quick and easy tea which I took from fat free vegan. I followed the recipe exactly apart from the sour cream part. I love Toffuti Better than Sour Cream and so I just used a couple of spoonfuls of that stirred through the paprikash instead. It went well with the brown rice but I’d also try it with pasta as suggested. It could have maybe done with something green on the side for a prettier picture but it was very tasty!
