Empanadas, Mexican millet, refried beans, guacamole, sour cream and salsa

When my husband was experimenting with giving up wheat, I looked around for a supplier of pure corn tortillas. This lead me to Mexgrocer website. Of course, while I was there I spent a small fortune on other Mexican items, including a tortilla press to make my own.

So I decided to make something Mexican when a friend came to visit. I don’t how it happened though, but I ended up not really using any of the ingredients that I bought!

I had a squash hanging around so I make the empanadas again from Veganomicon. With it I tried the Mexican millet, also from Veganomicon. That was really nice and a pleasant change from rice, couscous, blugar wheat etc – good for anyone eating low GI or gluten free. I also whipped up some refried beans and guacamole, and served it with 2 excellent bought in products. Toffuti Better than Sour Cream is without doubt my favourite dairy replacement product around, and some green salsa from the Mexgrocer order. See, I did use some of that delivery in there somewhere!
