Mushroom and coriander sausages with celeriac mash, cabbage and cider gravy

We had a strange Sunday this week. We were off to see the comedian Frankie Boyle and needed to leave at about 5:30, so we decided to have a main meal at about 4pm. I had celeriac and cabbage that needed using fairly desperately so I decided to to make these sausages and serve them with mash and veg.

The sausages appeared years ago in an issue of BBC Vegetarian Good Food magazine. This version was somewhat adapted in that I had to substitute the egg yolks, flour and breadcrumbs! They were quite fragile in the pan but still tasted great!
