Cauliflower and mushroom pot pie with black olive crust

I’ve started getting an organic box delivered again. The company we used to use stopped delivering to our area but we found another one. The box this week had the perfect combination of vegetables for this dish from Veganomicon. It’s cauliflower, mushrooms, leeks and carrots in a herbed sauce, with a black olive crust on top.

My sauce was a bit thin, probably because I used rice milk to make it rather than soya milk, and rice milk is a bit thnner. Still, that’s easily remedied next time and overall this was a good tasty dish. I particularly liked the crust which was really easy to make and I’d do this again.
