Braised seitan with brussels, kale, and sun dried tomatoes

Another thing my husband won’t touch is brussels sprouts. He was out today so I decided to try this sprouts dish from Veganomicon. It contains the ingredients mentioned in the title, braised in red wine, stock and different herbs (except I used greens as I couldn’t get any kale. I don’t think it made any difference though). I served it, as suggested, with some poppyseed polenta, also from the book. I like polenta when it is set firm and fried, but I can take or leave it served wet, as in this dish. However, it was a good texture with the sprouts and the liquid from the stock. It’s not a dish I’ll be making that often as when i’m on my own I like to try different things, but I did enjoy it.
