Red pepper, leek and butterbean stew

This is a very simple, one pot stew. I think the recipe came from a magazine but I don’t remember which one. I simply fried a couple of red peppers and leeks in some olive oil with some fennel seeds. Then I added dried basil, white wine and a tin or tomatoes. Follow that with a drained tin of butterbeans, some black olives and some chopped up vegan sausages (I used Redwood sage and marjoram). Very healthy and tasty too.
